I’m passionate about the rich intersection of food, culture, and nature. With a deep love for cooking, I explore the history of gastronomy, nutrition,
and folklore to uncover how our culinary traditions have evolved.
I’m also fascinated by the benefits of plants and their role in holistic wellness.
A lover of gastronomic literature and fine arts, I express my creativity through making and collecting artisanal foods, while my art and photography capture the beauty of food and nature. Through these pursuits, I celebrate the timeless traditions that connect us to the earth and one another.
My story
I’m from the heart of Transylvania, Romania, and my love for cooking has been with me for as long as I can remember. With over a decade of experience working in restaurants in both Romania and the UK, I’ve honed my skills as a chef and manager, always striving to bring a unique, artistic approach to the kitchen. As the owner and founder of Dayums Nomadic, I believe that food is more than just flavour - it’s deeply connected to its source, and I’m passionate about creating dishes that reflect both quality and sustainability.

"My food and my art are inspired by a fantasy of mine. It’s a mixture of memories and stories, and a visualisation of a utopian Romania. For me the idealistic dream of Romania is to have had a balance between folklore, spirituality, art and science and to have never experienced communism. I wish that we had the chance to achieve an equilibrium between peasants, with their ancient knowledge of our existence, and the intellectuals with their ambitions for our future. I feel we missed that opportunity, but using food and art as mediums I want to simulate this culture. Our menus are constructed with popular dishes of Romania. The way I present the food is a bit different than how we normally present it, making a parallel of the present with the alternative reality I previously mentioned. Also I want us to imagine myself as a nomadic merchant and artisan presenting you this menu in a world where ancient knowledge is still relevant (this year I used as inspiration the Romanian Folkloric Calendar) and set in a place of culture where I invite you to experience Romanian Hospitality with the flair of an art performance.For a few hours I will bring you plates with food and we’ll feast together, learning to appreciate what nature is giving us, making food the bridge between imagination and reality."
